A luau with Chef Leo is unique because unlike most luaus on island, you actually get to witness the ancient practice of preparing the Imu, or underground oven. Setup and cooking can take about 20 hours and up to 3-4 people, but don’t worry, you can come and go as you please and simply show up for dinner when it’s ready. Foods prepared in the Imu are steamed to perfection by hot lava rocks under a bed of banana and ti leaves. This is the secret to the famous Hawaiian Kalua pork; other foods cooked in the Imu are sweet potatoes, kabocha pumpkin, beets, and carrots. Additional traditional foods like poi, lomilomi salmon, and rice are prepared separately and everything can be tailored to your particular tastes.
